Commercial Cookery with Arthritis

The chef industry is notorious for standing for long hours on your feet, and repetitive cutting with knives, carrying large pots, not to mention all that bending into those wonderful under bench fridges. So what happens when you develop Arthritis and work in an industry where there is an expectation that you are superman?
YOU ADAPT!
We are funny creatures in that we have the ability to adapt to most situations that arise in our lives, and when I developed Psoriatic Arthritis at a ripe old age of 25 I had to figure out how to do most things in the kitchen without being in agony.
Firstly we need to stand in one place for hours at a time chopping, for this I found that a good quality, thick rubber mat helps soften the effects on your legs and back, I also believe that a good pair of leather clogs are much less painful than those big heavy army boots. Those rubber mats are also great for kneeling on to get into those under bench fridges, avoiding the need to bend.
Adjusting the height of you work bench can also greatly help your back. The work benches in kitchens and most homes are all 1 standard height, unfortunately we are not. If you need to use a foam box to raise your chopping board up slightly so that you’re not hunching, it is a good idea.
Chef knives have come a long way in the last 50 years, and there are all different shaped handles now to assist with hand comfort, it is a great idea to source a good knife with the right shaped handle to assist in hand pain. There is even little foam attachments for some knives, again to assist with comfort.
Get work colleagues to assist you with lifting heavy things, all of my colleagues had no drama in assisting me with lifting once I told them I have joint pain.
A good rheumatologist and treatment, along with some changes in the way you do things and you can still do what you love and continue to cook in this rough industry.
I have been a Chef now for just on 20 years, and am the Executive chef/Food and Beverage Operations manager of a large hotel. I have never let my Arthritis get the better of me, no matter how much I am hurting.

| Report: Women In Pain
This report details the public lecture / hypothetical held in Perth in March 2008 as part of the IASP’s Global Year Against Pain in Women. The hypothetical was jointly presented by the Australian Pain Society, the Arthritis Foundation of Australia (WA), and the Bone and Joint Decade 2000-2010 and was directed at all women who suffer pain, as well as their families, carers and friends.

| Report: ANZSHM/BJD Arthritis Workshop - Building the Evidence for Health Practice
The Arthritis Workshop was held as part of Medicine in Context: the 10th Biennial Conference of the Australian and New Zealand Society of
the History of Medicine (ANZSHM), Canberra 3-6 July 2007. It was presented in conjunction with the Bone and Joint Decade 2000-2010 (BJD). The workshop looked at changes in the management of arthritis, sharing the perspectives of different groups, including historians, health professionals, patients and others. The report includes abstracts, speaker's notes for their presentations, concluding comments, and background information on arthritis. |

| Report: Celebration of World Arthritis Day - Public Research Symposium
To Celebrate World Arthritis Day on the 12th October 2006, the BJD and Arthritis WA, in conjunction with the School of Physiotherapy at Curtin University, held a public research symposium. | Arthritis Australia's Juvenile Idiopathic Arthritis (JIA) Resources
Arthritis Australia has recently produced a number of resources for parents and teachers of young people with JIA. These include a Teachers Guide, School Advisory Form, general information on JIA and more specific information on JIA and schooling. All of these resources are available as pdf files which can be downloaded from the Arthritis Australia website.

Most of us have had niggling pain in a joint, a wrist when we type, a knee when we run. So when Natalie Fuller started getting pain in her right arm, she attributed it to her busy life. But the pain got worse. And worse
and worse. After a battery of tests, 18 months ago she was diagnosed with rheumatoid arthritis.
Fuller is 26 and when the pain started, she never considered arthritis could be the cause. “I never really associated arthritis with young people like me,” she says. She is not alone; it is a popular misconception that arthritis is an old person’s disease. In fact, the Arthritis Foundation of Australia figures show that in 2004 of the 3.4 million Australians with arthritis, most of them were of working age and around 60 per cent of them women, while chronic arthritis affects four children in 1,000. If current trends continue, one in five Australians will be living with arthritis by 2020.
